Pesto! Seasonal variations
A vegan and nut free pesto that has become a farm favorite!
We've grown a following for this recipe for the past five years and it has become an solid staple at our farmers' market stand. Traditional use on pasta, but also excellent on pizza, roasted carrots, toast... add a dollop to some quinoa and cooked beans. Be creative!
Ingredients:
Arugula Pesto: Arugula, garlic, olive oil, lemon juice, sunflower seeds, salt, pepper
Peashoot Pesto: Peashoots, arugula, garlic, olive oil, lemon juice, sunflower seeds, salt, pepper
Instructions for use: Freezes well. Once thawed in the fridge, best used within one week. With the natural preservatives of the olive oil and garlic base, can last longer.
